One of my favorite dishes in the entire world is pasta with a marinara and basil sauce.
I made some today and thought I’d share my recipe with you.
For the marinara sauce you’ll need:
1/2 cup extra-virgin olive oil
2 small onions, finely chopped
2 garlic cloves, finely chopped
2 stalks celery, finely chopped
2 carrots, peeled and finely chopped
1/2 teaspoon sea salt
1/2 teaspoon freshly ground black pepper
2 (32-ounce) cans crushed tomatoes
2 dried bay leaves
To prepare:
In a large pot, heat the olive oil over a medium to medium high heat. Next, add in the onions and garlic. Sauté until the onions are translucent, then add the celery, carrots, and 1/2 teaspoon of each salt and pepper. Continue sautéing the mixture until all the vegetables are soft. Finally add in the tomatoes and bay leaves, simmer uncovered over low heat until the sauce thickens which is usually about one hour. Remove and throw away the baby leaf. Taste the sauce and season with more salt and pepper if desired to taste.
To prepare the dish:
You’ll need:
A pasta of your choosing. I used linguini today and fresh basil -chopped.
Choose a pasta of your liking. For this dish I prefer a linguini. Cook until your desired tenderness. I like my pasta with a bit of a bite. Once the pasta is cooked, toss it into a pan with some of the marinara sauce in it until it’s well covered. Remove from heat and sprinkle in some fresh sliced basil leaves (I use kitchen shears to slice my basil leaves). Serve and garnish with basil leaf.
